This is a recipe I've been developing for my cookbook... I've finally figured out the "cobbler" part on top... Finally its now so moist and the crumb sticks together and its not too sweet. Its perfect!
Here's the recipe:
Caramelized White Peach Cobbler
3 whole ripe white peaches peeled and chopped
1/4 cup firmly packed brown sugar
3 Tablespoons salted butter
1 Tablespoon pumpkin pie spice
2 cups baking Mix (I used Bisquick)
1/2 cup of heavy Cream
3 Tablespoons melted butter
1/4 Cup sugar
1 tea vanilla
+ 1 or 2 tablespoons milk -just to thin crust till its spreadable (depending on where you live you may not need any)
Peel and chop peaches. Melt butter till just slightly brown, add brown sugar & pumpkin pie spice, stir then add peaches, stir and cook till nicely caramelized, the sauce will be thick and bubbly. (See photo)
Pour into tall casserole dish.
Mix baking mix, cream, melted butter, sugar and vanilla. Stir till well combined, add extra milk only until its spreadable. (See photo)
Bake @ 350 degrees for 40 minutes.
Make sure crust is done and not gooey.
Serve with French Vanilla ice cream.
