Mosaic Monday!

Our Roses are blooming again...
I picked a simple bouquet and placed them in the rose vase my Mother hand painted.

Foodie Friday 11-20-09






Ingredients

  • 1 cup whole wheat flour
  • 1 1/2 cups quick-cooking oats
  • 1/2 cup packed light brown sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 2/3 cup applesauce
  • 1 teaspoon pure vanilla extract
  • 1/2 cup dried sweetened cranberries (recommended: Craisins)
  • 1 egg
  • 1 tablespoon butter, softened

Directions

Preheat oven to 350 degrees F.

In a large bowl, combine all of the ingredients. Stir until well blended.

Scoop 2 tablespoons of batter and drop onto a cookie sheet lined with parchment paper. Flatten each cookie with the back of the tablespoon. Repeat until sheet is full, being careful not to crowd. Bake for about 10 minutes, or until lightly golden.

Cool on a wire rack for at least 5 minutes. Store in an airtight container.

OutDoor Wednesday 11/18/09

A visit to the Phoenix Zoo with the family

Some of you know and some of you might not know, my hubby Mike is a 4 year liver transplant recipient. Our Son Scott was the living donor. They both checked into the Mayo Clinic Hospital the same morning... They took our Son in first and took 60 % of his beautiful healthy liver and sewed him up and sent him to intensive care then took in my Husband Mike and totally took out his damaged liver and put our son's 60% piece into Mike. As soon as the Doc.'s hooked it up it started working perfectly... In the coming weeks, Scott's would regenerate rather rapidly and the piece in Mike from our Son would grow to a healthy size and after 2 months both Father and Son's livers would be normal size. Amazing isn't it?
What has THIS got to do with Our Door Wednesday?
Well every year the Mayo Clinic Hospital sponsors a reunion. This year they heald it at the Phoenix zoo! They had a BBQ for us then set us loose at the zoo! We had a great time and it was a beautiful day!

The sting rays are healthy, happy and playful and very soft.


This sting ray was eating a shrimp from my fist.

It was a beautiful day and celebration of happiness and wellness.

Today the bloom stalk is 6 feet high and growing every day!


I took a photo with Hubby standing next to it and he is 6 feet tall.


I also took this photo of the first look at the blooms emerging.


A neighbor told me that I won't lose the whole plant, just the part that the bloom stalk is coming from... the ones at the feet of the mother plant will continue to thrive... Whew...
Here is a photo of the children at the feet of the Mother Agave that is going to bloom.

I used a different mosaic method this week...

Foodie Friday 11-13-09

Lucky Friday the 13th Foodie Friday!

I got my Lucky Charms


But my Menu is:
London Broil, Hassleback potatoes, snowpea/carrot stir fry

Cut your potatoes,
I use Panda Express chop sticks so I don't go all the way through.
I use a very sharp knife.


Olive oil and season all and garlic powder.
Oven for 45 minutes to an hour.


Make a marinade of soy sauce garlic,powder, ginger, what ever you like really...
Add chopped parsley and green onion and marinate (in the fridge)
while you prepare your potatoes.


When your potatoes are 10 minutes from bring done...
Throw your London Broil on the Grill 8 minutes a side on med heat on a gas grill. That rule always gets me med rare. With out fail. Don't turn it till your 8 minutes are up,
don't even look at it. Trust in the force...

While the first side of your london broil is cooking
quickly stir fry your veggie in olive oil and a dash of toasted sesame oil.
Turn the meat and cook another 5 t0 8 minutes depending on how you like your meat cooked... Perfect every time, I promise!
Slice the meat after letting it rest 4 to 5 minutes.
