With Easter approaching quickly I thought it important to get these reminders of what to do with the leftover eggies so we can put them on our to do lists! Or at least store the ideas somewhere in the back of the brain where we can recall them when our refrigerators are filled with boiled eggs!
Lets not forget the Scotch egg...
Homemade that is...
Not those nasty ones that stores sell on every corner in England.
But the ones that only take minutes to make and are SO delicious!
No recipe needed... Just follow my tutorial...
Start with:
Wrap it around a peeled hard boiled egg
Roll in bread crumbs...
Bake at 425 for about 25 minutes, depending on how thick the sausage it.
I love these little gems!
I also make a Dijon/Dill dipping sauce.
They are just good!
And yes... the lovely, delisious comfort food...
Egg Salad!
I like mine just on a plate with crunchey veggies...
But my family loves it on bread
Here's my lunch every other week or so...

These look really good, I think I have heard of scotch eggs but never knew what they were! Thanks for sharing such a unique recipe!
ReplyDeleteOh my gosh! You just brought back a swarm of memories! I must have been about 6 when an elderly neighbor came over one day with a plate of these. She showed my grandma how to make them and they let me help. Thank you!

I have never heard of Scotch Eggs. They look wonderful....can't wait to try them:)
ReplyDeleteOh, Rainey...your grands are gonna love you forever and I KNOW they will be wanting to spend time with you. I don't think you have one single thing to worry about. They will remember the walks, picking up treasures, reading, swinging with them...all the bonding you do now will last them (and YOU), for a lifetime.!

I've heard of Scotch eggs, but I had no idea what they were. Yum. I love egg salad, I have it often too.
