Water, water and some Dolphins!

Another day in South Padre Island...
Today we took the bay Cruise.
It was such a beautiful Day to do this...
I got some great shots of Dolphins.

Foodie Friday!

The beauty and bounty of South Padre Island
for the dinner table...


Hubby went fishing and brought home two beautiful Red Snapper...


Hubby cut off the head off one of them so I could filet it for fish tacos...


Beautiful filets for the grill...


This one I stuffed with lime and parsley, poured olive oil and white wine over it and steamed it on the grill...



On the grill: The whole fish is steamed... the other grilled.








Then we visited the local farmers market where I met Suzanne and Bud from Acacia Farms where they grow better than organic fruits and Vegetables, without chemicals and pesticides for a healthier lifestyle here in Texas.


Their Produce is incredible!



Have you seen or tasted black radishes?
Delicious crispy a little spicy... Healthy.


We had a lovely salad with homemade Ranch dressing...






One of the freshest dinners I have had in a long time!

Out Door Wednesday!

Walking/Driving around South Padre Island, Texas.

I'm still here, on Spring break from Spring Cleaning on South Padre Island.
Its an interesting place with lots of things to do...
Today we did a little Driving/walking tour.

Here is the long bridge over the bay to the Island.


Walked right up to a shark!


Hubby Collected Sea Shells... (while I was chasing birds)


Visited the old light house


Had Lunch...



Found the old Yacht Club that is now a Hotel...

Snapped a photo of this loaded Papaya tree in someones yard!


Did some relaxing on the beach...


South Padre Island is a very fun place to winter over for my parents...
I'm so happy we were able to get away and come down for a week!

Foodie Friday!

With all the Spring Cleaning (Click on spring cleaning to see what I have been up to) I have been doing these past weeks I have been putting my slow cooker to good use! This week I am making "Pats Italian Beef". Its easy and delicious and it lasts for two meals! Thanks Pat!

I start with this:


And this:


Add 1 can of beef broth and some spices:


Set on low for 6 to 8 hours.
Cover and go to work...

When done you have a fully cooked tender roast that I shred to look like this:


I serve it on Mashed potatoes for dinner or french rolls for lunch.

Spring Break From Spring Cleaning!

I'm taking spring break this year...
I'm heading to South Padre Island, Texas
No, I'm not a college Student. My Dad and Step Mom are snow birds from Canada and weather over there in SPI till they can get home and reopen the golf course.
My Dad designed and built this Golf Course Dragonfly Golf Links.

Now on to South Padre Island...
I haven't been there and I'm excited to see the place,
it looks really interesting!


We leave early (And I mean early) Saturday morning.
I won't be taking a blog break so I will be posting photos of Spring Break!

Why I need a Spring Break:

I have been spring cleaning, and I'm still not done. Since my son and his wife and their three children and a large chocolate lab have moved out its pretty quiet here. But its given me a chance to set a goal. That is to get rid of 50% of the "Stuff" that we don't use or need. Is been daunting and you really do have to be on a mood to say "sell it/get rid of it" especially if you are one of those crafty people that will use it, somehow some way in the future. That's all going to some one who will actually get a "round to it". In my attempt to lighten things in our home I will also be redecorating each room as we go. That means pulling everything out, going through everything, every bit of paper, every drawer, all of it. It also means hours of looking on craigslist for things to redecorate and sell! So far I have made over $500.00 dollars selling furniture and things that I am getting rid of. I AM SIMPLIFYING my life and my home in 2010. I was going to start with my closet, but with the kids moving out it left a gap in my home. They used the grandkids playroom ( I had already redecorated that room, click here, you have to scroll past Mosaic Monday to see the before and after of the playroom) for the kids bedroom, we just moved in a bunk bed and their clothes and some more toys.
My son and his wife used the guest room, and then when my daughter in love had her baby, they moved into my office/studio. Plus the guest bath... so basically one wing of my home was really unbalanced when they moved out a couple of weeks ago. So I started in the guest room instead of my master closet.

I took everything out of the guest room and went through photo albums, record albums, table cloths, extra sheets... you name it it was in there... Stored in that headboard and the closet. I sold the, too large for the room, queen headboard on Craigslist.
When I get back from Spring Break this room is getting its makeover...

When I get back I will paint it... Clean the Carpets then put it back together.

Well, I'm off to pack!
