Refrigerator Dill Pickles


I picked up a couple of bags of those baby english cucumbers at Costco because I wanted to make some refrigerator dill pickles. This is a great recipe and I could munch on these everyday!








Refrigerator Dill Pickles
1/2 pound of pickling cucumbers (I used the baby english cucumbers)
3 Tab. Course salt
1 1/4 cup white vinegar
3/4 cup water
Fresh Dill
6 cloves garlic chopped

1) Wash and cut up cucumbers any shape you like, slices, spears, halves. Place in colander, sprinkle with half the salt and let drain in sink.
2) In a small pot bring vinegar and water to a boil, add remaining salt, stir and take off heat. Let cool 5 minutes
3) Put dill and garlic in the bottom of a 1 quart sterilized canning jar.
4) Rince cucumbers and pack them tightly into the jar on top of the dill and garlic. Pour vinegar water mixture over cucumbers, cap, let cool completely. Place in fridge for at least three days...

Out Door Wednesday!


I promised the World's Biggest Rose Tree!


"The world’s largest rose bush is a white rosa banksiae banksiae, commonly known as Lady Banks’ rose, located in Tombstone, Arizona. Rosa banksiae banksiae was introduced in the United Kingdom in 1807.

The original root of this spectacularly successful rose bush was sent from Scotland in 1885, and was planted by newly-wed Mary Gee behind her boarding house. The single trunk is approximately 12 feet in circumference. From this single trunk it spreads over an arbor that covers over 8,000 square feet. In spring it is covered with millions of small, fragrant, double white blooms."

On our trip to Tombstone last week end I just HAD to see this... I took these photos, but its incredible in person! And boy was in in bloom!

Out Door Wednesday

The Pair of Mourning Doves that live at our house in the front yard hatched their baby a while ago, this is evidence in this photo. See the baby has outgrown the nest just a bit. We all him the teenager that just won't leave. He barely fits in that nest!




As I am photographing the baby in the nest Momma bird watches over me, doing things to distract me so I don't get too close to her baby.


We also have a pair of Mourning Doves that live in the back yard. They haven't made a nest yet because they have it in their heads to make a nest on MY Ceiling FAN on the patio... Ahhhh sorry pretty Doves... No way.

I have tried to get a photo of them landing on there, I hear them in the morning early, making their little cooing nosies when they flutter away. Doves are so beautiful and peaceful birds, but the good Lord didn't give them too much smarts... They are always flying into windows... Sometimes when I'm sitting there! Scares the you know what outta me! The young ones build nests in the strangest places too... Sometimes dangerous and precarious places.

Yesterday morning one of the back yard doves was sitting on the fan motor and it had something in its mouth. Nesting stuff! So I turned on the fan to low and he spun around about 10 full rotations till it finally flew off. I hope it got the message that I don't want them building a nest there... They already lost a baby from building a nest up there at the beginning of Spring. My Granddaughter found the half formed egg on my patio.

But we love them... They mate for life so we try to protect the ones that live in our yards as best we can... They are part of our family!

Speaking of family... While I was out front photographing the Doves, our daughter and her hubby and our Grandson came by. They bought a trailer for their bikes to take Preston along... He looks so Kewl and he just loves it in there... what a ride! Its nice having them live in my neighborhood. Now is the time for us to get out and do things like walk and bike.... cause in a month we will all be in our pools!



Too Kewl for School! (Well he is only one!)



After a brief visit... I showed Preston the baby birdie... then off they went!

Met Monday & Mosaic Monday 4-19

I found this chair at the Goodwill.
Great lines, sturdy legs and seat, cane in fair condition and awesome price!






With a little work it would work perfect with the desk I found on Craigslist for my Mother-in-law's new home office.

So I removed the seat with 4 screws... and primed and painted it...


And a recovered seat...



Now its perfect and my Mother-in-law couldn't be happier!



I also spray painted her magazine rack while I was at it!

Foodie Friday! Shrimp Wanton Soup!

Shrimp Wanton Soup
Another Foodie Friday already!

This week I am dedicating my post to my fellow blogger friend
I'm on a diet and he has been cheering me on this past week as I
dropped 11 pounds!
Plus he asked for this recipe. Dave thinks I'm bold for putting myself out there like that... I consider it accountable and helpful to others who want to try this diet.

Shrimp Wanton Soup (Serves Two)
10 raw shrimp
10 wanton wrappers
fresh ground ginger or the jar kind
Soy sauce if desired
1 carton (or can) of chicken or vegetable broth
Sugar snap peas OR Bok Choy OR snow peas (whatever green veggie you like)
2 green onions chopped

Start the broth in a soup pot and bring to a low simmer.
Add 1/2 teaspoon ground ginger.
Add 1 tablespoon soy sauce to broth.
*Note* I add a little chicken broth concentrate for some extra flavor to the carton broth.
Add your choice of green veggie to broth
Make shrimp wantons: place one shrimp in the center of a wanton.
place a small TINY amount of ground ginger on each shrimp.
Place a few green onion slices
Wrap into little bundles

Blanch shrimp bundles in boiling water for 2 minutes (do 5 at a time)
Place right into broth and simmer for at least 4 minutes along with veggies.
Don't over cook your shrimp.

Guest Room before and after...

Here is the before of our guest room.


I sold the-too large for the room-queen size pier bed on Craigslist and took everything out of the room.


Had the carpets cleaned:


Painted over the "builders flat white" a warm tan.


Bought a beautiful headboard on Craigslist.


Bought the accessories and inspiration pillow:


And put it all back together...











The next room make-over is our guest bath
