Impossibly fresh wild Alaska red salmon.
Just caught LAST NIGHT...
That's right...
Wednesday night!
Over night shipped to me from Hubby who was in Alaska.
Some of the fish was salmon fillets and some of the salmon was smoked and some of it was halibut steaks!
Tonight we start with Smoked salmon appetizer...
I say...

I am trying to find words to describe this...
Lightly smokey, tender and moist
add a little whipped cream cheese
No need for crackers...
MMMmmm

We ate the whole slab...
Later I prepared:
Cedar Planked Salmon
Herbed Parmesan Orzo
Steamed baby Bok-Choy

Follow my easy tutorial!
Made the "Rainey's Magic Rub..."
(It turns from a rub into a glaze magically!)
1 Tab. McCormick's barbecue grill spice
1 Tab. Mrs Dash Chicken spice
1 tea. Paprika
1 cup of brown sugar
Mix well

Soak cedar plank for at least an hour prior.
I put mine in a full sink and the water wicks up.

Spray the board with a little Pam and place the fillet on the board.
This salmon was caught yesterday on a fishing pole and shipped over night.
It was very FRESH!
This is what they call "Reds" in Alaska... Also known as Sockeye.

Massage a little Magic Rub gently into the fish and let it soak in...
Then cover the fish with a THICK layer of the Rub.

Carefully place on your hot grill...
I added a couple fresh rosemary sprigs from my herb garden
located right behind me when I'm standing there grilling.
You can if you have it... if not, no worries!

Close the grill, turn it down to Med heat and WALK AWAY... Trust in the Force... even if there is lots of smoke coming out... don't open the grill... Smoke is good... oxygen will make FIRE!
After 15 minutes open the grill and check to see if it is done depanding on the thickness of the fish... Mine was kinda thin so 15 minutes did it... but if its a thicker slab of fish let it go 20, providing you soaked your cedar well!
After 15 minutes:

See how the rub turned into a glaze all bubbly and pretty?
Mine was done... I pulled it and plated it.


Perfectly moist and tender...
