Cilantro~Lime Rice

If you don't like cilantro you won't like this side dish...
It resembles the fancy Burrito Restaurant's rice.
Its a very nice side dish to replace the tomato saucy Spanish rice for a change.
I serve it with grilled fish, but you can place it on the plate with a steak or grilled chicken too!

Cilantro~Lime Rice


2 cups cooked rice (I use my rice cooker and long grain Jasmine rice)
1/2 finely chopped cilantro 
1 lime zest-ed and juiced
1 Tab. Butter or Olive Oil

As soon as rice is cooked, add butter, cilantro, lime zest and juice. 
Stir well and serve.
