Homemade Christmas Tamales
I live in the Southwest and its just not Christmas without Tamales! Usually I buy them because there are so many amazing Tamale makers out there. But this year I decided to try my own.
I started with my sauce, I used one can of fire roasted tomatoes. One can of diced green chilies and a package of taco seasoning. Using my emersion blender I blended it till smooth.
Then I browned about 3 pounds of boneless country pork ribs in olive oil and added it all to my crock pot and set it for 5 hours. I also put some dried corn husks in the sink to soften.

| Pile on some shredded pork |
 |
| Drizzle on a teaspoon of sauce and roll tamale |

| Steam for 45 minutes. |
I served them for dinner plus put some away from Christmas.

These look amazing! I would love to make these, but finding corn husks where I am is impossible :( Have you ever tried parchment paper?
