Foodie Friday! ~ Orzo with Bella Mushrooms~

A Simple side dish to serve with a steak or chicken breast.
Boil Orzo pasta according to package. Drain well.
Saute a handful of baby Bella Mushrooms with butter and wine and salt and pepper.
Add drained Orzo and some fresh chopped flat leaf parsley to mushrooms. Add sea salt and pepper and some Parmesan cheese and stir till melted... Serve right away with a sprinkle of Parmesan cheese.

Foodie Friday! ~ Just Brownies~


Plain ole 
 "Easy Brownies"

 
I have been making this Brownie recipe for 40 years! When I was little I wanted an "Easy Bake Oven". But my Mother would say "No... you can bake something a lot better in a real oven." And I'm glad she taught me to cook real recipes! (I heard easy bake cookies turned harder that rocks a few hours after you made them.) So here it is. 
Easy Brownies!

"The" old "Easy Brownies" recipe card. Use a 8x13 pan!
I got this Brownie pan from my daughter for Christmas so I had to try my old stand by recipe using the pan. Well, I had forgotten that I had doubled the recipe many years ago from an 8x8 pan to a 8x13 pan and I over flowed the brownies... After they settled a bit it was OK but next time I will only make half the recipe. Here are the photos! Its kinda funny, when I opened the oven to check on them I realized my mistake right away.

Outdoor Wednesday ~Exploring a cave~

We met up with some friends at Lake Powell. 
That's their boat with the green bimini top.
While running and exploring the lake one evening we came upon this hole. It looked like a cave.
But Lake Powell is so huge its hard to make out the proportions 
until you are actually right up on something.

There you are!
Its our turn to go in the cave. All those lines and grooves were made by rushing water.


We are inside the cave now, looking out. It was deep and very dark and scary!
Especially when we turned off our bow lights.
THAT was so cool!

Lets get outta here...
Lets go make dinner before it gets dark!

Met Monday ~Lamps~

My Mother-in-law moved here and had these lamps for her guest room that she was going to give to Goodwill and buy new ones...  Until she saw how pretty they looked after I painted them. She though I was crazy... Now she won't part with them!

Foodie Friday! ~ Stuffed Bella Mushrooms~

The Amuse Bouche to go with the herb crusted halibut with sweet pea béchamel sauce.

Amuse Bouche/ Stuffed Bella Mushroom with caramelized sweet onion and garlic
Chopped sweet onion, garlic and fresh parsley, Parmesan cheese and seasoned bread crumbs
Caramelize the finely chopped onion. Add parsley and garlic then stuff each cleaned mushroom cap.
De-glaze the pan with white wine, then add a teaspoon to each mushroom.
Top with Parmesan cheese and breadcrumbs then bake at 350 for 20 minutes with remaining wine in bottom of baking dish

Fresh Extra Virgin Olive oil to dip crusty bread in
Salt and Pepper to taste
Olive Branches festoon the table
Stuffed Olives

Soft lights
Leaded crystal and good wine
Light the night

Illuminate the branches
Three course Dinner
