Butter Tarts!

I have family visiting from Canada! 
This morning we made Butter Tarts! 
A traditional Canadian treat!


Butter Tarts


Filling
1/2 cup brown sugar
1/2 cup corn syrup
1 egg
2 Tab. Butter
1 tea. Vanilla
1 tea. vinegar
1 pinch salt
1/4 cup currants or raisons 
Crust
1 pie crust recipe (she used Pillsbury ready made)

Cut circles of pie crust to fit into muffin tins or tart pans and place into pans.
In a med. bowl mix filling ingredients and pour into crusts and bake 20 minutes.
 That's it!

Mexican Shrimp Cocktail

1 Bag of Med. size frozen cooked shrimp (defrosted & rinsed) 
3 cups Clamato Juice
1/2 cup Orange Crush Soda
1 cup diced celery
3 Roma tomatoes seeded and diced
1 cup white onion diced
1/2 cup of chopped cilantro (or to taste)
1 cup diced english cucumber
1 avocado diced
Squeeze of lemon or lime
Dash of Cholula hot sauce (or any hot sauce you like)
Salt /Pepper
Lemon or lime garnish

Chocolate Guinness Cake

Ingredients
Cake
1 cup Guinness stout
1 stick unsalted butter
¾ cup unsweetened cocoa powder
2 cups superfine sugar
¾ cup sour cream
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
2 ½ teaspoons baking soda
Icing
8 ounce cream cheese
1 cup confectioners' sugar
½ cup heavy cream
Method
Preheat oven to 350 degrees. Butter a 9-inch springform pan and line bottom with parchment paper.
Pour Guinness into a large saucepan, add butter and heat until melted. Whisk in cocoa powder and sugar. In a small bowl, beat sour cream with eggs and vanilla and then pour into brown, buttery, beery mixture and finally whisk in flour and baking soda.
Pour cake batter into greased and line pan and bake for 45 minutes to an hour (Check at 45 minutes for doneness, poking a skewer in center.). Leave to cool completely in the pan on a cooling rack, as it is quite a damp cake.
When cake is cold, gently peel off parchment paper and transfer to a platter or cake stand.
Place cream cheese and confectioners' sugar in a mixing bowl, and whip with an electric beater, until smooth (You may also do this with a food processor.).
Add cream and beat again until you have a spreadable consistency.
Ice top of cake, starting at middle and fanning out, so that it resembles the frothy top of the famous pint.
Yields about 12 slices.

Happy St. Patricks Day!

Yeah, I really didn't eat those but there are those in my home who did... 
But I won't name names.

Corned Beef and Cabbage/ Yukon Gold potatoes and carrots are in the slow cooker set to low...
It will be ready for an early supper.
I'll be trying my hand at Irish Soda Bread later today too...

The corned beef came out tender with little fat content because it was cooked all day in the slow cooker

Banana Cake with Cream Cheese Frosting.

A delicious moist cake with an amazingly creamy frosting! 

Banana Cake with Cream Cheese Frosting
Recipe adapted from Bake or Break Recipes & Pinterest



  • Cake:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, at room temperature
  • 2 tablespoons canola oil
  • 3/4 cup sugar
  • 2 large eggs plus 1 large egg white, at room temperature
  • 1 teaspoon vanilla extract
  • 4 large ripe bananas
  • 1/4 cup milk
  • Frosting:
  • 4 ounces reduced-fat cream cheese, at room temperature
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups confectioners' sugar
  • 2 tablespoons chopped toasted walnuts, or coconut (optional)

Preparation

Make cake: Preheat oven to 375°F. Mist an 8-inch square pan with cooking spray. Mix flour, baking powder and salt. With an electric mixer, beat butter, oil and sugar. Beat in eggs and egg white, then vanilla. Mash bananas with milk.
Stir half of dry ingredients into butter mixture, then stir in banana mixture. Mix in remaining dry ingredients. Pour batter into baking pan. Bake until a toothpick inserted in center of cake comes out clean, about 40 to 45 minutes. Let cake cool in pan on a wire rack.
Make frosting: With an electric mixer, beat cream cheese and vanilla. Reduce speed and gradually beat in confectioners' sugar. Spread cake with frosting and sprinkle with walnuts, if desired.
