Emergency Preparedness

This is a great little blog to start learning about food storage and emergency preparedness. With all the wild fires and evacuations in the west and flooding and hurricanes in the east. People having to leave their home or life with no power for days... I think its important to have at least a 72 hour food and safety kit stored in your home or car. I found this great little blog to get you started.

Foodie Friday Pistachio Pesto and Roasted Golden Pear Tomatoes


My garden is abundant right now... Giving me her bounty, so much so, that's it hard to keep up sometimes with as much traveling I have been doing this summer. I needed to dead-head the basil because it was starting to bolt and I gathered up a bowlful of golden Pear tomatoes before I left for my Alaska trip. 


Pistachio Pesto and Roasted Golden Pear Tomatoes






Pistachio Pesto
2 Cups fresh basil leaves
1 cup EVOO
1 Cup Pistachios
1 Cup fresh grated parmesan cheese
4 cloves garlic
fresh lime juice
Salt and Pepper to taste

Blend in a food processor drizzling EVOO in last while processor runs.
Jar or freeze.

Roasted Golden Pear Tomatoes


2 Cups fresh golden pear tomatoes
2 tablespoons seasoning mix I used a Costco blend called "Herbed Seafood Rub" I use it a lot. 
(or any spice blend you like)
3 tablespoons of EVOO I used O Olive Oil's Meyer Lemon

Cut tomatoes in half. add olive oil and spices and roast @ 350 till tender and sweet! 
About 30 to 40 minutes, depending on your oven.

Serve on fresh Italian Bread
